The Fleur de Sel is harvested on the surface of the water in the saunant areas and is composed of very fine crystals. It is formed under the combined action of sun and wind. This naturally dry white Fleur de Sel (or “Sau-fine”) is slightly rosy when harvested and gives off a fragrance that resembles that of the violet. This is one of the peculiarities of the Fleur de sel which is very rich in magnesium. The Fleur de Sel, or salt of salt is a noble salt reserved for the table and preparations of Culinary Art.
